Chocolate Cherry Cheesecake
So after church tonight we had a Fall Fellowship. ¬†Everyone brings soup, bread and pie. ¬†James made the soup and it was delicious, but he will have to post that recipe. ¬†He picked out the pie recipe (Taste of Home 2009 Quick Cooking Annual Recipes) but I was the one who made it this afternoon. ¬†It was delicious also and I am sure you have guessed what it was… Chocolate Cherry Cheesecake. ¬†It was a simple recipe and only took about 45 minutes to mix and bake.
The Recipe: Prep: 15 min. Bake: 30 min + cooling
1 jar (12 ounces) maraschino cherries
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 eggs
1/2 cup miniature semisweet chocolate chips
1 chocolate cookie crust (9 inches)
6 chocolate covered cherries (although I didn’t use these)
Drain the maraschino cherries, reserving 2 tsp cherry juice. Cut the maraschino cherries into quarters; set aside. In a small mixing bowl, beat the cream cheese, sugar, and reserved cherry juice. Add the eggs; beat just until combined. Fold in the chocolate chips and cherries.
Pour into the crust (crust will be full). Bake at 350º for 30-35 min or until the center is almost set. Cool on a wire rack. Serve with chocolate covered cherries. 6 servings

Okay, so I know this is weird, but I used to love Cheescake, and now it’s good in small bites, but I don’t even enjoy eating a whole piece. I know, I’m weird. That cheesecake sounds pretty good though.
